Apple Cinnamon Muffins

This muffin is one of our fixed Sunday morning routines along with hazelnut french press coffee for us and babyccino for our tot. Don't be scared by the long ingredients list, it is actually very quick to make. Easy way to get oats into your tot's system, in fact you can increase the oat amount and/or add wheat germ and wheat bran as long as you keep the liquid vs. dry ingredients ratio the same. 



Ingredients
  • 150 gr. all purpose flour
  • 75 gr. wholewheat flour
  • 50 gr. quick-cooking oats
  • 100 gr. fruit sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 TBS water
  • 250 ml milk
  • 2 eggs
  • 1 TBS light olive oil
  • 2 TBS ground cinnamon
  • 2-3 apples' puree (or 200 ml apple sauce)
  • 50 gr. raisins


      
Directions
  • Preheat oven to 200C. 
  • Coat 18-cup mini muffin pan with cooking spray. 
  • In a large bowl, combine flours, oats, sugar, baking powder, salt, cinnamon and mix well. 
  • In a separate bowl, whisk together milk, water, eggs and oil. 
  • Stir the flour mixture to milk mixture. 
  • Fold in apple puree and raisins. 
  • Bake 12-15 mins until a toothpick inserted comes out clean. 
  • Cool for 5 mins before serving.
